Cut off the
green parts of the scallions and reserve for slicing later, then finely slice the white part and add this to the pan slicked
with orange oil (this is where I added the bacon fat since my chicken chorizo left no fat in the pan), along
with the ground cumin, stirring
everything together for a couple of minutes over a gentle heat.
While the pita breads are cooling off, lets get our filling ready, add 1 tin of tuna to a bowl, along
with some cut
green Spanish olives and some cut cherry tomatoes, add a 1/4 teaspoon of garlic powder, a 1/4 teaspoon of dried oregano, 1 tablespoon of extra virgin Spanish olive oil, season
with sea salt and freshly cracked black pepper and mix
everything together
In the south, we like our turnip roots cooked
with the
green tops, so I fried up some bacon, julienned the roots, and braised
everything together in a bottle of German pilsner.
Sweet
green peas mixed
with crunchy roasted arugula and broccoli, creamy avocado slices and fresh herbs, and then
everything is dressed
with a tangy lemon vinaigrette.
It trumped
everything because for whatever reason I was super attached to enjoying this
green goodness
with my dad -LCB- and because I always thought pistachios to be the prettiest nuts in the world!
Just like at Johnny's Kitchen, homemade Datil vinegars and old Grolsch beer bottles filled
with Datil hot sauces are scattered on tabletops, ready to be doused on
everything from field beans to Southern - style cooked
greens.
As if that wasn't all enough, I topped it
with some gorgeous
green pea shoots and radish sprouts (because who am I kidding... I need something
green on
everything I eat).
