Well first, every wheel always features the signature Comté characteristics: they all play
with the flavors of onions, garlic, nuts, butter, salt, and potato.

Shallots have a milder
flavor than a red
onion with a hint
of garlic.
So in order to feel a little better about my junk consumption, I caramelized
onions for a good 40 minutes or so then whipped them into a big container
of Greek yogurt
with a few other
flavors.
If you want to try it
with all coconut cream I think it would be fine, however I'd recommend increasing the lemon by a couple
of tsp as well as adding some
onion and garlic powder since you'll lose the
flavor from the mayo.
