From there, I scooped the soft
vegetables into a food processor and pureed them
with lemon zest and juice, and
fresh mint leaves.
Let the
vegetables cool for ten minutes, squeeze the soft garlic
from its peels, and blitz everything in a food processor (or high - powered blender)

fresh cilantro, lime juice, and salt.
