with a few moderations: I double the amount of curry powder and add a bit of tandoori

And Chinese five
spice is something like our
garam masala — but this one has ginger, cinnamon, anise, fennel, clove and liquorice root... this is not asked for, but since it had a mix of
spices I used it... you can go
with cinnamon - clove - ginger powder — will fit in perfectly.
Despite its ease, the dish involves classic Indian approaches to layering assorted flavours that involves frying up mustard seeds during the initial seasoning, cooking down the onion until it starts to caramelise along
with loads of garlic, adding the
spices, simmering eggs
with tomatoes and finally the
garam masala powder gives a magical touch to the recipe.
