Hi Mark, that recipe was actually not my own (created by our talented contributor Naomi - Low - Carb Lemon Meringue Parfaits) Meringues do work
with granulated sweetener too but I prefer using powdered erythritol.
I wanted to try and make an almond flour muffin
with a granulated sweetener, since that is what most of my readers have on hand.
Just know that if you use a granulated sweetener it will be a much more crisp cookie, and more crumbly too, and while my picky palate found the gelatin granules slightly detectable, I still enjoyed the crisper cookie version when made
with a granulated sweetener.
This recipe will work
with granulated sweetener too - I'd use slightly less or go by the weight.
Not exact matches
You can also try replacing a
granulated sweetener (white or brown sugar) in the recipe
with a liquid
sweetener (honey, agave nectar or maple syrup).
Follow the
granulated sweetener directions and use LAKANTO Golden OR LAKANTO Classic
with 2 tbsp of water.
Honey and Molasses — Replacing
granulated sugar in a recipe
with a liquid
sweetener can be tricky, but honey and molasses do help hold baking together and can contribute a nice chew to cookies.
My favorite version uses maple sugar as the
sweetener, which can easily be subbed
with lakanto or other
granulated sweeteners like coconut sugar.
I like the firmer texture you get when using a
granulated sweetener, compared to the softer texture you get
with a liquid
sweetener.
But I still enjoy this cookie when baked
with a
granulated low carb
sweetener too!
The slightly larger more golden cookies were made
with maple syrup (same result from using honey too) but I much prefer the firmer cookie result from using a

I'm afraid you can't replace a
granulated sweetener with a liquid one, Amber.

I have not tried
granulated sweeteners with this recipe, but they should work just fine added in place of the syrup at the same point.

However, I keep organic sugar on hand for making kombucha and I've found that the finished flourless chocolate cake has a better texture when made
with granulated organic sugar than when it's made
with coconut sugar (my top choice of baking

with using any unsweetened nondairy milk, but you may then want to double the cornstarch to make up for the lost thickness Peanut butter: try almond or cashew butter Tamari / soy sauce: Bragg or coconut aminos Brown rice vinegar: regular rice vinegar, coconut vinegar, apple cider vinegar, or even lime or lemon juice Coconut palm sugar: any
granulated or liquid
sweetener of your choice Cornstarch: you could experiment
with arrowroot powder or tapioca starch, though I have not tried either
How sweet you get is entirely up to your tastes, but it's worth noting that
sweeteners with greater depth of flavor are a better pick than basic
granulated white sugar.
You can replace this
with sugar if you wish to, or any
granulated sweetener of your choice.

If you substitute one of these for all or part of the sugar, you should use less since those
sweeteners are made to equate
with granulated sugar.
If you replace all of the
granulated sweetener with stevia, you may experience a problem
with volume in a recipe or the recipe may simply not turn out properly.
Unlike most treats that are cooked / heated, chocolate works best
with powdered
sweeteners as it tends to be gritty if you use
granulated.

I am thinking next time I make it that I will coat the pan
with some
granulated Swerve
sweetener and a small amount of some melted raw honey to add an extra layer of sweetness.
