I usually serve
this with kale chips.
A lower - caffeine alternative to coffee is green tea or matcha green tea, both of which should be consumed with food, but away from protein — perhaps at 10 am
with some kale chips or buttered sweet potato.
My first experience
with kale chips wasn't brilliant - I left the stems in, burnt them and used too much oil.
I had a bad experience
with kale chips too, flying up into the heating element and burning.
Turn off oven and leave oven door ajar
with kale chips up to 15 minutes (optional; this ensures they're very dry if making ahead).
Serve
with kale chips and store bought gluten free crackers for an easy appetizer.
Remove them from the oven and set them aside

You can serve this with flax crackers or
with kale chips, red cabbage, celery, cucumbers, etc..

This salad includes quinoa,
kale, lettuce, avocado, black beans, cherry tomatoes, carrots and dried veggie
chips, and the dressing is made
with cherry tomatoes, salt, cilantro, red onion, chili and lime juice.
Surprisingly, I found very few recipes that combined
kale chips with any thing else to create a more well rounded snack.

I've tried a number of different methods of preparing
kale chips,
with the results ranging from soggy and chewy to even ashy.
Baked tortilla
chips slathered in enchilada sauce, black beans, and sauteed
kale and topped
with eggs, avocado, salsa, and cheese makes a satisfying twist on traditional chilaquiles.
I'm using
kale, never cooked
with it except made
kale chips.
I haven't been happy
with my baked tortilla and vegetable
chip experiments so far —
kale shrank so much it didn't feel like it was worth the work.
Kale is tasty when sautéed
with some garlic, but I've been hearing so much about
kale chips, that I had to try for myself.

I make coconut curry
kale chips by blending coconut meat
with the water, a few fresh kaffir lime leaves, a TBSP of nutritional yeast, and some curry together and then coating the
Kale leaves before I bake.
I thought later what a healthy combo,
kale chips and sweet pepper dip, each embellished
with a little olive oil and not much else.
To Make
Kale Chips: I harvested five or six stalks of
kale, removed the center stem and cut leaves into potato
chip - sized pieces (per cousin Edie's instructions) and ended up
with 5 cups.
Top
with the boiled eggs, and
kale chips.
