My only dislike was the overly eggy taste, which is fine for savoury pancakes, but I like mine with maple syrup so will try experimenting with less egg yolk and more egg white.

I would start with a little less of your maple syrup just to make sure it's not going to be too sweet.
I make the recipe less sweet by substituting 1 Tbsp maple syrup with 3 Tbsp water for the 1/4 cup maple syrup.
I tested a batch with maple syrup and less milk and it really wasn't as good, the flavor was much less rich and it was actually drier as well.
