In the beginning much time is spent in deconstructing (John 12:24 Except the grain of
wheat falling into the ground die, it abides alone; but if it die, it bears much fruit; but
with time the ratio of time spent deconstructing grows
less and reconstructing increases.
Yet we do have to sort the
wheat from the chaff — become more effective in proclaiming the Christian gospel and
less preoccupied
with propping up a particular way of being faithful to it.
I figured I would follow the above recipe
with less sweetener, olive oil and more whole
wheat in the flour mix.

The good news is these Healthy Apple, Maple & Pecan Muffins are made
with whole
wheat flour, coconut oil and no refined sugars (< — that's a HUGE step for me, guys) so there's
less guilt, and alllll of the right kind of muffin top goodness.
Except she makes it
with 3/4 cups whole
wheat flour and 1 cup white flour, and maybe
less milk.
We simply preferred the texture
with the pastry flour (it has
less gluten than the regular whole
wheat flour, so these are not quite as chewy).
I used King Arthur white whole
wheat with some added vital
wheat gluten, so I felt more pleasure and
less guilt while I considered the increased fiber content.

Eggless whole
wheat cookies
with a lot
less sugar were the right thing for me.
I made couple of modifications by replacing half the all - purpose flour
with whole
wheat, reducing the amount of sugar to
less than 1/2 cup and replacing half the flour in the streusel topping
with old - fashioned oats.
I would bake them a little
less time next time and would use an All Fruit Preserves, which since these are pretty healthy
with bran and whole
wheat flour, I wish I would have done so, but didn't think about it until it was too late, so I used Smucker's Raspberry Preserves — great tasting, but the number two ingredient is high fructose corn syrup.
I was actually enjoying eating
less wheat and after a few weeks
with very minimal gluten, I decided to eat a large homemade
wheat roll
with some butter... and then about an hour later I got a big headache.
They have far
less sugar and fat than traditional cookies (the carrot supplies some of the moisture) and are made
with both whole
wheat flour and rolled oats, which counts for something.
Spelt is more water - soluble than
wheat, so you may need
less liquid than
with whole
wheat flour.
It gets a little tricky when recipes only call for a cup or
less of flour, but I generally replace 1/4 to 1/3 of white flour
with oat flour and do a whole
wheat flour substitution for the rest.

Whole
wheat flour is inherently denser (i substituted 1/4 cup white flour) and nuttier than white flour, so it will inherently taste
less sweet than cookies made
with white flour.

I substituted the
wheat flour
with spelt flour (and used about 1 1/2 cup instead of 1/2 cup — the almond butter made the batter extremely sticky), I substituted the coconut sugar for about 1/2 cup of maple syrup (could have gone for
less, too!)
Should I have lost a pound or two just by going
wheat free and eating
less (because I'm satisfied
with much
less food!)
As I do
with all whole
wheat breads, I added some vital
wheat gluten to make the baguettes
less dense, and to boost the chewiness factor.
If I stick
with the whole
wheat, next time I may use
less and see if that helps.
