Hi Rebecca, I tried this recipe, and I replaced half of the coconut oil measure with olive oil, and the brown sugar
with liquid stevia instead.
I'm still planning to try out a 3 - ingredient version with less syrup, adding more sweetness
with liquid stevia or powdered erythritol, just to see if the texture is crunchier.

I have enjoyed this breakfast risotto
with less sweetener but a few drops of vanilla
