I have been
meal prepping on Sundays
for 2 - 3 dinners a
week and this was a really easy way to prep a
meal that my boyfriend was able to dump right in to the crockpot today while I was at work I came home and served it
with microwave brown rice and some fresh steamed green beans that I seasoned
with lime and cilantro.
I make lists, I plan a
weeks worth of
meals and shop accordingly (actually, Miguel shops accordingly -
with a typed up list, broken down by market) and I always cook
with the mind set that there needs to be something left over
for lunch the next day.

For obvious reasons, I can't dish on all the
meals I've been creating, but last
week I put one together specifically
with you in mind.
So when I saw down to make my
meal plan

week in July, I chose to make simple pan-sauteed sirloin steaks
with garlic butter, and chose a simple tomato salad as a side.

I dare say we've never needed comfort food more than we have in the past four
weeks, and at a time that's filled
with plenty of challenging days, the silver lining is that this is the right season
for such
meals.
Sometimes I get crazy
with my avocado toast if I've done some
meal prep
for the
week and actually have sauces and other stuff on hand (pesto, roasted chickpeas and sweet potato hummus are my fave toppings).
The slow - cooker chicken is spread divided up to make 4 different recipes covering breakfast, lunch and dinner — that means you can stock your fridge
with 16 individually - portioned
meals than can be enjoyed throughout the
week or frozen
for use later.
Thankfully, I plan ahead more these days
with simple solutions
for success, like putting up portions of leftover steak in the freezer
for future salads,
meal prepping a
week's worth of whole grains like quinoa or oatmeal, and placing my scoops of protein powders and recovery drinks into single - serve baggies
for a grab - and - go before the gym.

my hubs is heading out of town

weeks in october... although i will miss him, i am looking forward to a few veggie
meals (my fave but he is a big meat eater)... i am putting this on my list of comfort
meals... a bowl of this, warm fire, and romantic comedy on tv and i will be set thank you
for sharing
with tuesday night supper club.
An economical and easy
meal to prep
for those busy
weeks is to make meatballs
with tomato sauce.
It adds an extra layer to my thought process
for meal planning that I don't need to deal
with during the school year, and as you'll see in this
week's Menu Plan Monday below and in the
weeks to come, our
meals will have fewer carbs to account
for the abundance of carbs I know they eat at camp.
But I hardly ever blog about it because I'm someone who's content
with having the same
meal for lunch every day of the
week, every
week of the month.
For the most part it's great, but some days and
weeks I get bored
with the typical
meals and ingredients in my rotation.
Instead of shoving the leftovers into the fridge and hoping that inspiration will strike, I'm intentional
with what I want to do
with them, which also takes the guesswork out of a few more
meals for the
week.
When these types of
weeks happen it's hard to get dinner on the table in a timely manner so I am always trying to come up
with healthy and easy to assembly
meals for such occasions ---- join the club, right?
