I got the idea for these
muffins while thinking about fall holiday staples
like Sweet Potato casserole
with marshmallow on top.

like, but not
with this

Biscuits are always handy to have on hand: alongside dinner and slathered in honey butter, for making breakfast sandwiches (
like with these egg
muffins, cut in half), sopping up some homemade sausage gravy, or delectable desserts
like strawberry shortcake.
To make them extra pretty, I
like to top the «
muffin» pies off
with homemade whipped cream, a halved pecan, and a dash of cinnamon.
Most days my breakfast is something quick

muffin with almond butter, avocado toast, eggs, yogurt
with fruit, oatmeal or a smoothie, depending on my mood and the season.
The non-lined
muffins came out of the tin fairly easily but I
liked the look of them

with and even though we
liked them, they are better

Everything was great about these
muffins except the gritty texture!!!! It was

Cranberry Orange I use ground flax meal as a substitute for the gluten a lot of the time as well, but I tried using it
with these
muffins and the nutty flavor that they impart, that I usually
like, didn't work as well.
I also
like Leslie's idea of making
muffins with a dollop of strawberry jam.
The ripe mashed banana keeps the
muffins moist without a lot of added fat and I chose to use agave nectar to sweeten them, since it's natural and the flavor is so mild that it wouldn't compete
with the chocolate & banana flavor
like honey or maple syrup might.
The result is lusciously sweet caramel that's full of the health benefits of dried dates
with just a little of the very fall -
like flavor of the dates themselves — which pairs perfectly
with the pumpkin in these
muffins.
With this in mind, I decided to skinny up one of the recipes that I already had, but still keep the great lemon flavor, and the ultra-moist cake -
like quality that made those
muffins from Pastry Perfection....
Prepare
muffin pans (line
muffin pans
with 24 foil liners, for regular - sized
muffins, or spray mini pans
with canola spray or line
with liners - you can use liners if you'd
like, but we usually don't bother when making mini
muffins).
I keep meaning to make savoury scones /
muffins - this looks
like just the recipe to get going
with it.
I knew the Sunshine Sweet Corn I'd picked up would pair perfectly
with something spicy and I love the idea of baking

with ground almond and honey versus some cupcake you buy at Walmart that's loaded
with sugar, and also contains artificial sweeteners and color additives.
This bread is
like eating a giant double - chocolate
muffin, but
with a very distinctive malty stout flavor that makes it decidedly more complex and less sweet than your standard chocolate
muffin situation.
So... I've been feeling a bit guilty about the accolades I gave to last weeks VGFH
muffins... I'm not sure they are very good, maybe more
like good - for - healthy, I need to tinker
with the recipe and feel
like I may have misled you.

muffin cases are from silicon and I they are not going to the trash... I use them to bake, to pack lunch and I will use them for years.
With this
muffins I particularly
like the crust of cinnamon - rose - sugar in contrast to the moist interior of the
muffin.
These are a soft cakey cookie (more
like a mini
muffin) that really does taste
like banana bread

like my corn
muffins on the sweeter side, because it occurred to me that they would be super good
with sugar sprinkled on top before baking.
