This dish is a simple meal that is well paired
with some grass fed beef or
organic ground turkey.
Ingredients: 1 Tablespoon olive oil 1 medium yellow onion 1 tsp dried marjoram 1 tsp
ground cumin 3/4 lb
ground buffalo (I've also used
ground dark
turkey meat, it's great too) 1 1/2 Tablespoons chili powder 1 bay leaf 1/2 Tablespoon unsweetened cacao powder 1/2 tsp salt 1/8 tsp (or a few shakes) cinnamon 14 - oz can whole tomatoes
with their juice 1 1/2 cups beef stock (low sodium or no salt added) 4 oz tomato sauce (I used some
organic canned) 1 - 2 cans small white beans, rinsed and drained
I typically gravitate toward chili (vegetarian or
with lean
ground turkey), grilled fish or sautéed mushroom tacos
with whole grain or
organic corn tortillas, sliced avocado and pico de gallo, or zucchini or carrot noodles
with spinach pesto or
turkey meat sauce.
You can certainly make this pizza
with organic ground chicken,
turkey, diced chicken breast or simply leave it veggie, but we were in the mood to go to town
with this «za!
Just like whole
turkey, we encourage the purchase of certified
organic and pasture - raised
ground turkey since
organic standards require
organic turkey to be raised on
organic feed and since pasture - raising will provide you
with greater nutrient benefits.
