Hi Ella, I want to make these brownies this weekend, but one of my friends has a
nut allergy... Is it possible to substitute almond
flour with a different
flour, such as buckwheat / spelt / coconut / any
other?
Nut flours are very particular, so you might be able to get away
with substituting, but you'd have to make some changes to the
other ingredients.
But there are a few differences between these two cookies; one is that Mexican Wedding Cakes contain ground
nuts, and the
other is that Melting Moments replace some of the
flour with cornstarch (corn
flour) so the cookies literally «melt - in - your - mouth».
I do that
with other ingredients too (
nut and seed
flours, sweeteners, etc.).

Blanched almond
flour: Ground almond meal, or any
other ground
nut or seed meal should work (i.e. sunflower seeds, walnuts, pecans, etc.), though the flavor may be affected
with any substitution.
To be honest, I wouldn't use regular
flour unless you do ensure the
nut butter / liquid mixture is warm when you mix it in
with it - Can you use a brown rice or
other flour?
It all started
with a leftover baked sweet potato that I put in the food processor

Almond, vanilla, and peppermint are high on my list of things to avoid but I've had success
with most of your recipes by subbing
other nut flours, and different flavor extracts.
Well, you can switch oat
flour to any
other flour (use gluten free, if needed), and use whatever
nuts you have or replace them
with seeds, if you can't or don't want to use
nuts.

Although I don't blog... I've been baking
with Almond and Coconut
flour for a very long time now... I buy all my almond
flour from Honeyville... (like you, not paid to say so) and Coconut
flour from Tropical Traditions or Honeyville (again, not paid to say so...) I like the fineness of their
nut flours, which produces a lighter product far superior to most
other brands... I'm also sugar and gluten free...
Other foods
with gluten — baked beans (canned), breaded foods, cold cuts, energy bars, French fries (often dusted
with flour before freezing), fried vegetables / tempura, fruit fillings and puddings, roasted
nuts, seitan, soups, trail mix, veggie burgers
