Pimiento Cheese — cheese plates are the best.
In Jamaica it is made
with consists of
pimientos (allspice), black pepper, onions, garlic, vinegar and Scotch bonnet peppers.
So here's how to do it, complete
with a little
pimiento cheese recipe, but the burger's not bad even if you have to use a good - quality store - bought
pimiento cheese.
Three things stood out —
pimiento, chili powder and paprika (the name of the restaurant helped
with that one).
In a mixing bowl, toss the chicken
with the remaining 2/3 cup olive oil, 1 tablespoon of the vinegar, the
pimiento, Niçoise olives, red pepper, capers, basil, parsley, and garlic
(I remember eating store - prepared
pimiento cheese out of a container
with a spoon as a kid.)
And of course, they are fried in olive oil and finished
with sea salt, just like
pimientos de padrón are prepared in Spain.
I found the Spanish chiles known as
pimientos de padrón at the Downtown Growers Market here in Albuquerque and fried them in olive oil, then dressed them
with sea salt.
After that it's on to wood - fired clams
with Benton's sausage, crispy pig's - ear lettuce wraps, and country ham - flecked
pimiento cheese on heirloom - wheat crackers.
Pimiento cheese will be had, whether in fritter form or served
with house crackers, but no matter what, you must order the ham board,
with scraps of smoky, salty country ham served on a plank made from an old whiskey barrel.
From September to mid-October, the farmers» markets of Vladivostok were filled

Buxton uses American cheese and a
pimiento cheese made
with extra sharp cheddar and a smoked cheddar.
I find
pimientos with the shelf - stable pickles or on the international / Goya aisle at my grocery store.
But the true delight is in their taste,
with the slightly salty bite of the olive, the sharp
pimiento, and the smooth, creamy garlic cheese roll.
