Yep, it all started
with pitaya (also known as dragon fruit), while I was exploring all the nooks, crannies, volcanoes and rice fields of Bali.

Pitaya Smoothie — This pretty in pink dragonfruit smoothie is packed
with strawberry, mango, and pineapple.
I think I started pretty much every day of our trip
with either yogurt and granola and fresh fruit, or my new favorite discovery —
pitaya breakfast bowls.
The mango and
pitaya smoothie bowls are wonderfully delicious (
with no granola).
This Raw
Pitaya Smoothie Bowls combines the seasonal flavors of local nectarine and blackberries
with the crunch of delicious sprouted buckins, to create a sensational flavor.

Pitaya Premium Bite Size Cubes are 100 % fruit,
with active enzymes and no added sugar.
This time, I decided to take it one step further by mixing in some mango and
Pitaya, and playing
with layering.
You literally put a pack (or two) in your blender
with a few other ingredients and within seconds you've got a
pitaya smoothie bowl.
Nékter bowls are made
with pure, antioxidant - packed açaí and
pitaya, and naturally sweetened
with fruit.
Pitaya, banana, pineapple, coconut butter, and coconut water blended together and topped
with hempseed granola, raw coconut flakes, banana, and agave nectar.
I love experimenting
with chia seeds — you probably have seen my all - time popular chia oat
pitaya super-bowl and the very easy to make berry tahini chia pudding.
Abundant
with Omega - 3 fatty acids (which have anti-inflammatory properties), antioxidants, monounsaturated fats, vitamins, minerals, enzymes and fiber,
pitaya is also known as a beauty - enhancing fruit.
I used mostly ingredients from my local farmers market for the ultimate fresh taste combined
with frozen
pitaya, but you can play
with what you have available and make it your own.
Pour the liquid into your mug and sprinkle it
with a dash of
pitaya powder for added prettiness.
Blend
pitaya smoothie packs
with pineapple juice and stevia drops and you're good to go.
As you know from my
pitaya smoothie bowl and mango smoothie bowl, I've become slightly obsessed
with smoothie bowls.
Even
with my very well - stocked pantry and kitchen, I have now spent close to $ 200 of various ingredients, drawing the line at a $ 24 bag of vanilla powder (vanilla extract can be substituted) and the very difficult to source
Pitaya (up to $ 40 a bag for frozen chunks and unavailable in my Whole Foods markets or at the large organic grocery in the city).
Pitaya is loaded
with antioxidants including vitamin C to neutralize free radicals, and also magnesium — an important mineral needed for enzymatic reactions and for your cells to create energy, plus fiber and B vitamins — for healthy cognitive function and they help to convert your food to energy.
Superfoods such as
pitaya, maca powder, hemp seeds and avocado allow your body to function at a higher level because they are jam - packed
with powerful nutrients.
For a hot pink unicorn you could go
with beets or
pitaya instead.
Pitaya,
with its vibrant fuschia color and superstar lineup of antioxidants, fiber, magnesium, and B vitamins, makes an amazing blended base for a breakfast bowl as nourishing as it is beautiful.
