In a large bowl, add the cooked black beans, cooked brown rice, sautéed mushrooms with all the spices, ground walnuts, breadcrumbs, and ketchup.

I love that is has three types of beans too which makes it extra hearty... and with the chicken it's just a bonus to compliment the rice!

Might serve this with some cilantro rice and cumin black beans.

Here we have my concoction for the evening: sorta - refried black beans over Mexican rice, topped with corn and mango pico de gallo (you can find a discussion of pico de gallo in the comments section here, if you're not familiar with it.)

It's typically a bowl of rice seasoned with a sauce made of soy sauce, chili paste, or doenjang (a fermented soy bean paste) and served with vegetables, grilled meat, and a fried egg.

Serve it with Cilantro Lime Rice and Beans Beans for an easy instant meal or tacos, burritos, empanadas, etc...

Debi doctored some browned hamburger meat with onion soup mix and worcester sauce, then added some green beans (or any veggies you have on hand) over Della Basmati Rice.

I like to season the rice and beans with salt, pepper, and smoked paprika.
