I made roasted tofu with peppers, zucchini, and sweet potatoes, sliced veggies, smoothie packs, Loaded Veggie Tuna, carrot cake protein bars (coming soon), roasted snap peas and shallots (my new fave!)
We usually roast at 450 for just 20 minutes (starting with broccoli, peppers, onion and cauliflower and adding zucchini and mushrooms halfway through if we have them).

This Zucchini Risotto with Roasted Tomatoes screams summer!
It is absolutely outstanding combination with any white fleshy fish, shrimp, chicken, turkey or roasted vegetables and root vegetables, like zucchinis, sweet potatoes, mushrooms, mirliton, carrots, rutabagas, parsnips... among others.
Just watch them... you want the zucchini and peppers tender with a slight char, and the cherry tomatoes roasted just until the skin begins to split.
