Distrribute the salad between taco shells, top
with abocado
slices, sprinkle

lime juice, cilantro leaves and your favorite hot sauce.
Next, place an orange and

with a spoon or muddler, mash the
slices to release their juices.

No cooking required for this easy noodle salad
with deli -
sliced roast beef, crunchy green apple, crisp snow peas, roasted peanuts, and dressed
with lime, ginger, and garlic.
Garnish
with cranberries and
lime slice, if desired.
Other accompaniments included baked sweet potatoes, avocado crema (blend two avocados in the food processor
with a big handful of cilantro leaves,
lime juice, salt, and garlic to taste plus a bit of water to blend), Frog Ranch salsa, and red cabbage slaw (thinly
slice a head of red cabbage and add a handful of cilantro, about 3 tbsp apple cider vinegar, a drizzle of honey, and sea salt).
Garnish
with pink pickled turnips, fresh radish and cucumber
slices, Greek - style yogurt
with lime juice, herbs and / or hummus.
Before adding the coconut milk (we used 3 cans of the light stuff) to the squash, we warmed it up
with 3 kaffir
lime leaves, 2 stalks of lemongrass, 2
slices of galanga and 2 cloves of garlic along
with the curry paste.
To assemble: ladle ramen into bowls and top
with 2 egg halves, a generous bunch of cilantro,
sliced green onion, a squeeze of
lime juice and a sprinkle of sesame seeds.
Add crunch and a flare of flavor
with slices of jicama, roughly chopped cilantro and a
lime wedge (see above)

Beets are one of my favorite root vegetables, My mom used to make steamed beets
sliced with a squeeze of
lime and salt and served as an afternoon snack for my brother and I when we where kids.
Or, if you're serving the truffles at a party, arrange them on pretty plates, garnishing
with a nice twist of thinly
sliced lime zest, to bring the flavor and color to life.
