I didn't have all that, though, so my picture only shows a bed of spinach topped
with some sliced onions.
Top
with sliced onions and roast for 30 to 35 minutes until chicken is cooked and vegetables are done.
You could add also thin strips of flank steak sautéed
with sliced onions or some shrimp (instead of chicken).
Top with remaining cheese substitute and sprinkle
with sliced onions.
Surround roast
with sliced onions (put around sides, not on top or underneath).

I kept it simple
