500g courgettes, grated (I prefer grated to diced in this recipe) 1 small red or white onion, finely chopped (if using) Zest
of half a lemon 1 egg, lightly beaten 2 - 3 tablespoons
of grated Parmesan 70g
mozzarella diced 30g breadcrumbs (around 1
slice of bread
with crust) 20g ground almonds 1 tablespoon fresh parsley, chopped 1 garlic clove, finely chopped Sea Salt and Black Pepper to season
Top
with 1 - 2 tablespoons
of pizza sauce, another small
slice of mozzarella, and some parmesan cheese.
Top
with a nice thick tomato
slice, choose a ripe but firm tomato, another thick
slice of fresh
mozzarella, some fresh basil, a sprinkle
of salt and oregano and a drizzle
of olive oil.
Once chicken is done baking, remove and top each piece
with 2 tbsp pesto marinara + a thin
slice of mozzarella cheese and place back in the oven for an additional 5 minutes, until cheese has melted.

with a couple
slices of mozzarella, this is comfort at its best.
If you're using shredded cheese: Top each bread
slice with a bit
of your tomato and shredded
mozzarella mixture.
Separate the kraut into 2 servings, sprinkle each pile
with caraway seeds, and top
with a
slice of the vegan
mozzarella cheese.
Place 1 toasted baguette
slice on top
of each bowl
of soup and cover
with mozzarella.

This is
sliced fresh
mozzarella and jarred sauce
with a liberal dousing
of dried Italian seasoning from my spice rack.
Toss hunks
of fresh
mozzarella or sharp pecorino, Castelvetrano olives or
sliced carrots and peppers
with a light dressing
of battuto, and let them sit for 15 minutes before serving.
Top
with the remaining jar
of tomato sauce, then top completely
with the thin
slices of mozzarella.
