I love serving this recipe & love chopping up 2 cups baby fresh spinach & sauteing
it with mushroom mixture, for the stuffing.
Lightly grill them or heat them, and fill them up
with this mushroom mixture.
Spoon couscous into a serving dish and top
with mushroom mixture.
To serve, fluff up with a fork, stir in the parsley and top
with the mushroom mixture.
Place reheated baked sweet potatoes on plates or in bowls and top
with mushroom mixture and egg and some fresh ground pepper and salt to taste.
