I use organic stone - ground whole - wheat in this bread along
with a bit of
unbleached white bread
flour.
First, I replaced 1/2 cup of butter
with 1/4 cup olive oil in the crust; I also used a combination of
unbleached all purpose and
white whole wheat
flour in the crust.
I tried my first loaf
with Organic
unbleached white flour and all of my subsequent loaves have been
with Organic
unbleached bread
flour BOTH are good!!!
But eliminate the alloxan issue by buying
unbleached or whole wheat
flour, instead of
white flour that might be contaminated
with alloxan.
I used Reduced Fat Cheddar Cheese and
White Wheat
Flour (
unbleached) and did not have any problems
with a grainy texture.
Pie Shell 1 1/4 cups
unbleached all - purpose
flour, plus extra for dough and rolling surface 2 tablespoons confectioners» sugar 1/2 teaspoon table salt 8 tablespoons unsalted butter, chilled, cut into 1/4 - inch pieces 2 tablespoons vegetable shortening, frozen, cut into small pieces 1 large egg

1/3 c. olive or vegetable oil (I actually like to use coconut oil instead, me not Elise) 1 c. granulated sugar 3 eggs 2 tsp almond extract 1 tsp pur vanilla extract 3 1/4 cups all - purpose
unbleached flour 1 Tbsp baking powder Zest of two oranges 3/4 c. dried cranberries 1/2 c.
white chocolate chips Dust the cranberries and chocolate chips
with a little of the dry mixture before folding into the dough to prevent clumping and sticking.
Notes: I had success replacing the
unbleached flour with white spelt
flour — but I'm afraid other whole grain
flours may be too heavy (resulting in dense / chewier cinnamon rolls).
To maintain your starter, feed 1 ounce of starter
with 1 ounce of
flour (you can use either
white,
unbleached flour or whole wheat
flour) and 1 ounce filtered water every 12 hours (twice a day).
See, I also bake breads
with many different kinds of milled
flours... So do you mean
unbleached white flour?
For us, he suggests mixing 3 pounds
unbleached white flour with 1 pound of whole wheat
flour.
But eliminate the alloxan issue by buying
unbleached or whole wheat
flour, instead of
white flour that might be contaminated
with alloxan.

Besides the
unbleached white flour, the rest of the pancake ingredients are wonderfully nutritious whole foods, so I am OK
with the
white flour.
When I make them
with 1/2 soaked whole wheat, and 1/2
unbleached white flour, they come out fluffy and delicious (pancake recipe).
