The problem
with using dry beans though is the soak time.

Roughly 1/2 cup each of: - Red Pepper, sliced - Carrot, Shredded or peeled thinly
with a veggie peeler, or chopped - Broccoli Florets - Broccoli Stem - Cauliflower - Green

dry beans, or do what I did and

You can triple or quadruple this
dry bean recipe or
use it as is
with a 1 1/2 - quart slow cooker.
Directions for confit: While
beans are cooking finely chop 1 or 2 medium onions and 6 cloves of garlic / Saute quietly in 3 T olive oil for about 8 minutes, stirring often — don't let them brown / Add 2 C chicken or vegetable stock and simmer together
with 1 T finely chopped rosemary and 1 — 1 1/2 T winter or summer savory (I had to
use dried) until stock is reduced to just below the onion mixture / Still no salt / Mixture will be a little like «marmalade» in terms of thickness / The reduction will take anywhere from 30 -40 minutes, about the same time required to cook the
beans / When both are done mix together
with salt (start w / 1 teaspoon) and pepper to taste / Cook together for another 10 minutes / Good stuff.
Note: if
using homemade dough, pre-bake tart shell covered in foil
with dried beans or pie weights at 400 degrees F for 15 - 17 minutes, then and add meat and veggies and custard filling and bake for additional 20 minutes or so until the tart is set.

Vanilla, Berry, and Bourbon: Mix 1 teaspoon vanilla
bean paste in
with the buttermilk before adding it to the
dry ingredients, add 1 teaspoon to the filling, and
use bourbon in place of the lemon.
Serve

use wholegrain penne or a gluten free version made from

Using bulk
dried beans from a store
with high turnover I think really helped
with their cooking time.
Using a Taco Bell Home Originals Enchilada kit and the prepared
dried black
beans is an easy way to get dinner on the table
with little effort.
The best thing I tried was the pumpkin, sage and pecan ravioli
with a white
bean sauce (although I
used a regular homemade pasta recipe instead of her eggless version
with dried red chiles — but that could be interesting, too.)
Red would also be good -
used dried oregano (all I had on hand)- generous
with the cilantro and put in right after the black
beans - squeezed half a lime over the whole thing right before serving - garnished
with a bit of sour cream on the side - I
used El Yucateco xxxhot sauce to liven mine a bit.
