Let cookies rest for 2 minutes on the baking sheet before removing them to a baking rack
with a wide metal spatula.
Cool cookies on sheets 2 minutes, then remove
with wide metal spatula to wire rack; cool to room temperature.
Cool the cookies on the baking sheets for 10 minutes, then transfer to a wire rack
with a wide metal spatula (cookies will flatten slightly as they cool).
With a wide metal spatula flip the pancake over and continue cooking for an additional 1 - 2 minutes until golden brown.
