We may not have many chilly days or crimson and gold leafed maples in Southern California, but I can get a taste of Vermont by placing several large pumpkins by our front door and cooking with pumpkin and other winter squash.

Come winter season and I start craving for certain recipes which are cooked with love and passed from generation to generation.
You could certainly make this with any other winter squash, it's just that kabocha is the best, so why would you:) Other greens, like chard or collards, work in this as well, just adjust your cooking times accordingly so the greens are wilted, not crunchy.

Pumpkin, sweet potatoes, and winter squash (especially butternut) are some of my absolute favorite foods, so I am always sure to cook with them as much as possible during this time of year!
