I'm not familiar
with yacon syrup though I heard about it.
Anyone tried this recipe (or any baking)
with yacon syrup as a sweetener?
I'm trying this recipe this weekend, but I'm going to top the waffles
with yacon syrup instead of maple syrup.

You can also do a straight swap
with honey if you don't want to use the
yacon syrup — the end result will be a little sweeter that way, and higher glycemic.
Last month I received a free sample of
yacon syrup and I have been experimenting
with it in cooking — it is being touted as a straight supplement for weight loss, but I am more interested in using it as a natural sweetener that is lower glycemic than most.
Variation for ACD Stage One: Use carob instead of cocoa and sweeten entirely
with stevia or
yacon syrup.
It doesn't disappoint I start
with two cups coconut oil, one cup peanut butter, walnuts vanilla salt and the
yacon syrup.
- Used almond meal from Trader Joe's instead of blanched almond flour (added some flour at the end when I was mixing it all together because it was a little wetter than I thought it should be)- Used mostly agave
with about 1/8 C of maple
syrup instead of
yacon - Used 1 tsp powdered ground ginger / 1 tsp real grated ginger - Used a little less than 1/2 C grapeseed oil (didn't measure — just read some of the above comments and didn't want to use too much oil
In place of the
Yacon syrup, I used 3 large Medjoul dates and replaced the agave
with the same amount of honey.
Just made these
with chopped candied ginger and molasses instead of
yacon syrup; added extra lemon rind — delicious!
I made these ginger cookies last night
with molasses instead of the
yacon syrup and thought they turned out fantastic.
I subbed
yacon with blackstrap molasses and the agave
with maple
syrup.
Just wanted to share that I replaced the
yacon syrup with date sugar and the agave nectar
with honey, and they turned out fabulous!

They were full of weird ingredients I had never heard of
with funny names like tempeh, stevia powder, chia seeds,
yacon syrup, lecithin granules and xanthan gum.
Made these replacing the
yacon with maple
syrup butter, doubling the cinnamon, and adding a pinch of Chinese Five Spice... cookies came out an EPIC FAIL... flat and crumbly.

Yacon Syrup is a low glycemic, prebiotic superfood sweetener
with the most incredible taste!
Unlike other sweeteners (e.g. stevia or erythritol),
yacon syrup can increase the blood sugar and overall carb intake per day - that's the only reason I said «
with caution».

Yacon syrup is also high in antioxidants and potassium which is an essential micronutrient, when dealing
with the symptoms of «Keto - flu».
I heat 3 tablespoons
yacon syrup with 1 - 2 tablespoons coconut sugar and a teaspoon of vanilla.
