I found this recipe this afternoon when trying to decide what to make
with the yellow summer squash & red potatoes from our veg box for dinner — how perfect!
But summer doesn't seem the right time our typical preparation — chunked and roasted until brown with salt, pepper and olive oil — and this torte, cut
with yellow summer squash is lighter and perfect, especially served right from the oven with a green or tomato salad.

I can't bear even heating a pot of water for pasta, and the markets are beginning to overflow

I would eat this again & change it up

On the one hand, it's loaded

yellow squash, which are two of my favorite things about
