this without eggs as that is the main ingredient in this recipe.

I tried to do
without the eggs as well (substitute: mushy quinoa and «hope and prayer»), but those didn't do the trick and I ended up mixing in a single egg.

without the wheat gluten, but a few people in the comments mention using a vegan
egg substitute like ground flaxseed with water to act
as the binder.
Flaxseed makes an excellent substitution for baking
without eggs for recipes such
as quiche, cheesecake, cakes, muffins, and a quick bread.
It has the most amazing light, creamy, almost mousse - like texture which is reminiscent of the cheesecakes and mousses I used to make
as a pastry chef BUT the difference is this one is made entirely
without any dairy products, gluten,
eggs or refined sugar.
The cake, by itself
without icing, does have a different texture (what you describe
as rubbery / spongy) than a normal cake with
