This fall my family was gathered around my mother, whom we were caring
for in her final days... we took time to celebrate a birthday with a special kind of carrot
cake... we used the leftover carrots / apples / celery and who knows what else from the morning's juice (my dad's a bit of a health nut) and turned it into an amazing
cake, complemented by walnuts, pineapple and, of course, decadent cream cheese frosting, covered with fresh toasted coconut... it was so moist and delicious... the making of it a
wonderful memory and the eating of it sublime.
They are
wonderful to have
for pies, crisps,
cakes, coulis... and smoothies throughout the year.
I actually love mini-things but don't have mini-tins, so I dump the double recipe into a bundt pan and when I'm feeling extra lovey — I make a double batch of the caramel sauce (from your
wonderful caramel
cake), pour it on top of the
cake and then sprinkle Maldon sea salt flakes
for a dessert - y version of my beloved banana bread.
It is
wonderful as a topping
for a plate of greens, on a rice
cake, or straight out of the container with a fork!
We have had the
wonderful WAGfree bakery in London
for a while, (and I have been really happy to see their
cakes in Selfridge's recently, as I don't make it down to Brixton very often), but it will be fantastic to have what looks to be the complete gluten - free experience available so centrally on Upper Street.

Made the cashew coconut cream frosting and I used a little extra honey and whipped it up in our magic bullet it turned out pretty good, then I frosted the
cake with it and sprinkled shredded coconut over the frosting and put the
