While I'd heard that certain things like bananas
worked as egg substitutes, I didn't really buy it.
In my recipes, Ener - G
works as an egg substitute in just about all of them!
For one, I was aware that sweet potato
works as an egg substitute in lots of baked goods, much like banana.
Can flaxseed mill and water

eggs as a binding agent, then any of these will
work as an
substitute for
eggs.

eggs and be sure to use
as soon
as you prepare it.

One of the many cool things about chia is that it

I am vegan and tried to make these with a

Third, the original recipe called for buttermilk but I found that full fat yogurt
worked best,
as the yogurt has a mild binding quality to it (vegan baker sometimes use soy yogurt

A comment & a question: for those who can't eat
eggs, but are okay with soy (i.e. both not intolerant & okay with Sephardic Passover rules, which allow legumes), when my daughter was a vegan, I used tofu
as an
egg substitute in regular matzo balls, & it
worked perfectly.

Instead of
eggs, I used white Japanese sweet potato, which
worked perfectly for a
substitute,
as it is naturally sweet with no strong «potato» flavor.
Hi Stacey don't know whether this would
work as a sub for
eggs but in the book Breaking the vicious circle Elaine
substituted puréed apple for
eggs, I've made her almond muffins with puréed apple and they
work, but haven't tried it with Elana's recipes.
I have made this bread before with bananas
as the
egg substitute, so I know it
works.
I've used a quarter cup of applesauce
as an
egg substitute, but now I'm interested to try this method and see if it
works even better!

There are other

work as well, but it all depends on what the
eggs» purpose is in the recipe.

substitutes work — such
as commercial
egg replacer like Ener - G, flax gel
eggs, and chia gel
eggs — but I've also read that some people just use fattier meat and the fat acts
as a binder, some use a little tapioca starch or potato starch, some use a little ricotta cheese, and so on.
I am glad these
worked so well and I am really happy to hear the banana
worked so well
as an
egg substitute.
Pumpkin puree
works beautifully
as an
egg substitute in a recipe like this (incidentally, lots of other fruit and veggie purees do
as well, in case you're interested in some experimentation).
I know when
eggs are used
as a binder or more than 1 - 2
eggs oil alone doesn't
work for a
substitute.
If there's one thing a person gets out of being an avid vegan baker, it's banana bread recipes, which is at least partly attributable to the fact that bananas
work so well

I replaced the English muffins with some white bread slices and the chicken salamis took over the Canadian bacon — both the

egg in muffins
as an
egg substitute and it has
worked.
