My meals this week for lunch
worked well (from my meal prep) and diners were simple like roast
chicken,
salads and sweet potato fries or the beef stew I made
on Sunday.

chicken, and throw some dressing

This dressing
works on farmers market
salads that are loaded with fresh fruits and veggies and it also
works perfectly
on salads that have protein added in too, like grilled salmon, steak, or
chicken.
I am now eating 1/2 of a peanut butter sandwich
on whole grain bread for breakfast, a protein bar (Kirkland) for snack; the other 1/2 for lunch with a 80 calorie yogurt for lunch (or a small apple); a premier protein drink for a snack after
work and a
salad with 3 oz of
chicken or beef (PACE salsa for dressing) and an once of cheese for dinner.
When I'm at
work, I wrap the potato in 2 - 3 very wet paper towels and stick it in the microwave
on the «potato» setting — about 3 1/2 minutes — while I eat my
chicken salad, and about halfway through eating, bing!

This curried
chicken salad is one of my personal favorites because it's super convenient for
work days or for taking
on a picnic.
I'm currently using it as a guide for making sure I choose healthy options and still
work to combine healthy fats (usually almonds) with proteins
on days when my lunch and / or dinner consists of a
salad +
chicken.
