So I abandoned the whole
yeast bread thing in favor of quick breads and store bought loaves.
The whole homemade legit
yeasted bread thing is something I enjoy doing with my mom to tradeoff on those long kneading shifts and with actual wheat flour.

yeast breads a more tender texture and longer shelf life would be to swap 1/4 cup of the All Purpose Flour with 1/4 cup Potato Flour.
I really miss real
bread or pizza or all the wonderful
things that involve
yeast.
Rae — the great
thing about soda
breads is that unlike traditional
yeast breads, there is no rising or resting time required.
However, one
thing I was not able to accomplish was
yeast breads.
My son loved the Pamela's
bread I was baking until we found out that he is also allergic to
yeast and eggs (as well as many other
things including soy and safflower) Baking without eggs AND
yeast was quite a challenge, as you can imagine.
