This loaf might just be my favorite
yeasty recipe in my nascent bread - making life.
Reminds me a bit of the flour mix in the america's test kitchen pizza dough recipe, it seems the almond flour goes well with
yeasty recipes.

I made a half
recipe (stupidly, they're already gone) and am floored - so light, such good salty,
yeasty, slightly sweet flavor - YUM.

recipe is standard in our house but now I just have to try Marion's
recipe (gave Cook's Illustrated yeasted waffle a try but it was no match to JoC's) What do you think of adding vanilla to Marion's
recipe — would it conflict with the
yeasty flavor?
I used instant / rapid rise yeast, put the ingredients in at room temp, made them at midnight, halved the
recipe, didn't have whole milk so I used part water and part half and half — and they turned out beautifully — loved the crunchy outside, light interior, and wonderful
yeasty flavor!
If it's starting to have that familiar
yeasty smell, foam up and swell, it's good and you can add it to your
recipe; if it's stagnating and not getting foamy or rising, throw it out.
I subbed some whole wheat flour of AP flour, but otherwise followed the
recipe to a T. Every little pita round turned out perfectly: each poofed up in the oven and then when deflated and cool, each was soft and
yeasty, slightly chewy — essentially exactly what I wanted out of the bread.
I like the idea of the toastie offered in this
recipe, though I missed the
yeasty beer taste that complements the cheddar cheese so well.
Some other LC cooks are experimenting with using yeast, just enough of some net carb to feed the
yeasties, and slow raising — but that would be a different
recipe I suppose.
And finally - I hear (to my horror) that hot cross buns aren't a world - wide phenomenon: appalling, they are divine, proper little
yeasty slightly sweet buns, studded with delicious sultanas, an absolute treat on a chilly autumn (southern hemisphere) Easter weekend... give them a whirl, they are SO satisfying and surprisingly easy, a good first
recipe for people afraid of using yeast.
The first time I tried this
recipe I didn't rinse the almonds before soaking and before too long, there were bubbles on the surface of the soaking water and the whole thing smelled like
yeasty sourdough starter.

Recipe would be the obvious choice, but as I have been baking so much with yeast lately, experimenting for another project I am doing right now, I think I might leave the
yeasty sweet baked goods for a while, make a pause, before we get too tired of them.
