I originally set about to make this butternut squash and
yellow beet soup with humble aspirations, not thinking it would be blog - worthy.
At this point you can choose to leave the soup unblended so that you get bites
of yellow beet within the soup; or you can blend with an immersion blender for a super smooth texture.

Despite the fanciness of the way I styled this butternut squash and
yellow beet soup at home, this soup is one of those daily staples that easily enters the weekly rotation.
I'm a double fister: green juice with kale, celery, cucumber, ginger, sprouts, and
yellow beet in one hand and coffee with a chunk of my homemade raw chocolate, stevia, and coconut milk in the other.
If you feel that beets have too strong of a flavor,
yellow beets have a slighlty milder flavor.

the yellow beets for sale locally though.

yellow beets are quite different, they still offers you the sweetness that we know from beetroot, but the characteristic earthy taste isn't there and they are more delicate and humble in their flavour.
But this was not the only thing new to me, the salad also presented me with
yellow beets, an alternative to the beetroot which is the one normally used.
