Vegan
yogurts works a lot like whizzed tofu
as an
egg replacer.
For gluten - free or a more cohesive stack, use
egg replacer, such
as Ener - G, flax
eggs, or sub in up to 1/4 cup of dairy - free
yogurt or banana for each
egg in the box recipe.
Some
egg replacers are used mostly for binding so I don't think those would work
as well here, but some might, like mashed potato, or nondairy
yogurt.
Finding substitutes, especially for
eggs, has proven to be a continuous challenge
as I can also not have store bought
egg replacers, flax seeds, tofu, potato, or
yogurt... all of which are commonly recommended
egg substitutes.
