I pair this meatloaf with a greek

I make these with fresh mint when I want to serve with a coconut
yogurt cucumber sauce, fresh cilantro when topping with salsa, or parsley if I am just going for the green.

The herbed
yogurt dip is much like tzatziki
sauce but since my husband does not like
cucumber I decide to add a bit more herbs and both lemon juice and lemon zest.
For the flavors to come out, it's best to make the
cucumber yogurt sauce at least a couple hours in advance.

sauce is incredibly easy to make: just mix Greek
yogurt,
cucumber, lemon, and salt.
Served with grilled meats, tzatziki is a
yogurt - based
sauce mixed with
cucumbers, garlic, salt and olive oil, and can also contain herbs like dill, mint, parsley or thyme.

Sauce: — 1 container (6 oz) Yoplait © Greek Fat Free plain
yogurt — 1/4 cup chopped
cucumber — 3 tablespoons chopped red onion — 1 tablespoon chopped fresh dill weed — 2 teaspoons fresh lemon juice — 2 garlic cloves, minced — 1/4 tsp salt
for the (optional) tzaziki
sauce: 1 1/2 cups plain Greek
Yogurt 1 cup, peeled and finely diced
cucumber 1 tbsp.

Prepare tzaziki
sauce: In a medium bowl, combine Greek
yogurt, diced
cucumber, lemon juice, dill garlic, salt & pepper.
To make vegan tzatziki
sauce it's simply a question of combining any type of unsweetened plain vegan
yogurt with grated
cucumber, chopped dill, minced garlic and lemon juice.
Spread 1/4 cup of the
cucumber -
yogurt sauce on a pita (or lavash) and top with one - half of the chicken, tomato and lettuce.
