Choy Sum (bok choy sum,
yu choy sum, flowering Chinese cabbage) looks much like baby bok choy, but its yellow flowers set it apart.
Chop
the yu choy into large pieces.Thinly slice the scallion, keeping the greens and white separate.
Trim
the yu choy and broccolini and cut both into 1 inch pieces.
Once hot, add
the yu choy, broccolini, scallion whites, and a pinch of salt.
Serve alongside your favourite steamed greens (mine today is
yu choy with sriracha and tamari), and enjoy!

But I did a little research and now I know that
yu choy is a Chinese green, great to saute with a little ginger and garlic.
