Because
yufka are not so easy to find unless you have a Turkish or Middle Eastern market near you, I've modified my original recipe to replace the
yufka with phyllo
dough sheets, which are available in most supermarkets (sometimes located in the freezer section).
The market isn't just about fresh produce; shops sell everything a Turkish cook needs — olives, white cheese, olive oil, spices, herb teas,
yufka, the
dough used for borek pastries, nuts, dried fruit, bulgur, lentils, and the Turkish ravioli called manti.
