Add a couple of heaping spoonfuls of labneh, loosely swirl them around a la a marble cake, then sprinkle
with zatar or sumac and toasted sesame seeds..
The meal begins with some excellent bread served with Luke's
own zatar, dukkah and olive oil and balsamic vinegar.
My lebonese friend used to buy buttermilk biscuits, pound them flat, then bake with a mix
of zatar and olive oil on top.
For a vegetarian version, replace chicken with
baked zatar tofu, or top with labneh or greek yogurt.
One of my top favorite spices is
zatar — I especially love the sumac in it.
I served my falafels with homemade hummus garnished with hot sauce and
zatar and a cucumber - tomato salad with red wine - oregano vinaigrette.
If you don't have
any zatar, that's ok, its optional.
Add the tomato puree, cumin,
zatar, and season with salt and pepper.
While draining, prepare mixture of olive oil,
zatar, sumac and salt.
Dust the final product with pinches of sumac and
zatar and serve.
Mix tofu cubes with
the zatar mixture so that each cube of tofu is covered with a green powder coating.
