Love finding new recipes that have
zoodles in them.
Anything with cauliflower rice and
zoodles in it were amazing.
I was thinking about going for the traditional
zoodles in this recipe, but I loved the idea of having something a little sweet and crunchy to balance out the chicken and mushrooms.
If you find this time consuming, simply just cook
the zoodles in a microwave oven for 1 - 2 minutes or serve them raw.
Place
the zoodles in a fine mesh sieve over a bowl.
One that has jicama, carrot, pear and zucchini
zoodles in it plus matchstick pieces of those same ingredients.
I never liked
zoodles in the past but this recipe changed that, thank you for sharing such healthy yet tasty recipes.
Rarely do we eat fresh zucchini outside of when it's growing in our summertime back yard garden, so of course I'm envious of
zoodles in December.

This Instant Pot Paleo Chicken Cacciatore is full of fennel, mushrooms and sweet peppers

When I first made this recipe back
in April, I kept saying «oodles of
zoodles» as I was making this.
Once warm toss
in the zucchini
zoodles and cook for about 1 minute trying not to overcook the zucchini so it doesn't pull much water from it.
Instead of just lettuce and cut up cukes
in my salads I now add carrot and zucchini
zoodles which adds even more fiber to my salads.

I flew
