I love
zoodles so much, I had to include another recipe that included them!
If you are making this for the week I would suggest keeping the sauce separate from
the zoodles so that the zoodles stay fresh and won't get soggy.
Right before serving add the cooked noodles or freshly spiralized zucchini
zoodles so they do not get too mushy or soft from sitting in the broth too long.

This looks
so good — I've been collecting

I salted the
zoodles and left to rest as instructed and they got really soupy -
so I scrapped them and used fresh spiralised zucchini - no salting - It was a delicious, fresh, tasty and filling meal - leftovers surprisingly good the following day!
