I'm in love with
zoodles too and starting my day with oatmeal plus lots of fruit.
I pretty much always throw red grapes into
my zoodles too.

Right before serving add the cooked noodles or freshly spiralized zucchini
zoodles so they do not get
too mushy or soft from sitting in the broth
too long.
Now this dish honestly tastes just as good cold
too, especially if you like crisp raw veggies, but since I prefer my
zoodles having that «pasta - like» feel, I simply sauteed mine for a few minutes on the stove and then just tossed them with the pesto sauce.
Usually those ruts take the form of boring and predictable iterations — like combining the same roasted vegetables with baked chicken thighs or putting marinara with meatballs over
zoodles on the menu
too often.
Cooking the
zoodles longer, makes the sauce
too watery and the zucchini noodles mushy.
My sauce was just perfect, not
too thick and not
too thin and the
zoodles were crunchy but not raw.
For this spring vegetable
zoodle pasta I decided to bulk up the
zoodles a bit with some whole wheat pasta because I do love carbs and you should
too!
And there were plenty of delicious dressings and savory raw dishes
too like chili, tacos with thinly sliced jicama for a shell,
zoodles galore, hemp seed ranch dressing, cauliflower tabouleh, and more!
It's by go - to whenever I need a quick and easy dinner, and eating it over
zoodles makes it guilt - free
too.
When we did the Whole30, we served it over
zoodles (zucchini noodles) and it was pretty tasty that way
too!
Zoodles with Romesco Sauce is one of my new favorite dishes, and it's a low carb dish,
too.

I grew up on fettucine alfredo and have tried to substitute
zoodles, but now I realize having a protein such as chicken, shrimp (I would not waste scallops on this one,
too delicate) with a hard core veggie, kale base, broccoli base, asparagus base, would work wonderfully.
