This is a light and flavorful
dish that uses
zucchini noodles as a base and topped with tomatoes, red onions and artichoke hearts.
Ok, so here's another
dish (besides these
Zucchini Noodles) that I've been eating every other night.
I think it is still sitting in a corner of my living room, but I'm thinking of using it now that you made me aware that
zucchini noodles can be the base of an otherwise normal
dish.
So I prepared another green version, using Vietnamese, ready - made bánh ướt (you could use previously cooked, wide, brown rice
noodles for an even healthier
dish), leeks and
zucchini.
This is a refreshing, vibrant and beautiful
dish made in under 30 minutes -
zucchini noodles tossed with minced beef, a drizzle of soy sauce and mini heirloom tomatoes.
I am amazed at how similar it tastes to the traditional style with pasta
noodles, although I haven't had this kind of
dish in a REALLY long time b / c of being vegan and gluten free, so my memory could be a little foggy But from what I can remember, this recipe was even better, and I love that you sub the
zucchini noodles for the pasta
noodles to get an even bigger dose of veggies in this
dish!
Sausage meatballs add flavor to any
dish, whether you are adding it to spaghetti (using
zucchini noodles, perhaps?)
If you want to thicken the sauce, squeeze the
zucchini noodles using a cheese cloth before adding it to the sauce, or whisk one tablespoon cornstarch with one tablespoon milk and add the mixture to the boiling sauce or simply add more cheese to the
dish.
When the sauce is ready, add the
zucchini noodles and the grated cheese and bring it to boil, then remove it from heat and serve this perfect
dish.
Me and my family are creamy cheesy chicken skillet fans, we adore every version of the
dish, specially if it's prepared with
zucchini noodles instead of spaghetti or pasta.
