I really wanted some pesto
so I decided to throw it on my second favorite
noodle substitute... spaghetti squash (second behind
zucchini noodles).
The bolognese sauce for this
zucchini noodle spaghetti is homemade,
so it does take a bit longer, but it's well worth the effort for fresh, herby goodness.
I've made Cajun Shrimp with
Zucchini Noodles and it tastes
so amazing!
Right before serving add the cooked
noodles or freshly spiralized
zucchini zoodles
so they do not get too mushy or soft from sitting in the broth too long.
I just had way more sauce than I probably needed
so next time I will increase the
zucchini noodles.

So I prepared another green version, using Vietnamese, ready - made bánh ướt (you could use previously cooked, wide, brown rice
noodles for an even healthier dish), leeks and
zucchini.

zucchini version is good as leftovers the next day.
When I «invented» this recipe I was sure I'll prepare spiralized
zucchini noodles and some kind of avocado cream, but it felt like something is missing,
so I added some crispy fried bacon to my dish and then I realized it's perfect!

For best texture, I recommend storing leftover
