You could definitely serve these
over regular
pasta but since I was trying to keep things «Tone It Up» approved, I used
zucchini noodles instead.
Once the
zucchini is done I toss it with the tomatoes that in turn gets poured
over cooked whole wheat angel hair
pasta.
Of course, I served ours with quinoa, but you could also substitute brown rice or even serve this
over pasta (or
zucchini noodles).
Flavoured with loads of garlic, herbs and smoked paprika, this sauce is delicious served
over crisp
zucchini pasta.
I poured the blue cheese sauce
over riccioli
pasta and topped with a brunoise, which is a blend of similarly - sized and shaped diced vegetables (I used orange bell peppers, crimini mushrooms,
zucchini, jiacama and carrots).
Serve plain or with your favorite sauce as an appetizer, or simmer in your favorite red sauce and serve
over a
pasta substitute like
zucchini noodles or spaghetti squash.
Cashew cheese is great as a «melted cheese» substitute, but for something to spread on crackers or sprinkle

Pour the
zucchini and its juices
over the
pasta.
If you prefer a slightly more tender
pasta, you can quickly sauté the
zucchini noodles
over medium heat for 2 - 3 minutes, or serve this sauce
over your favorite high - quality
pasta instead.
For example, I fell in love with the cauliflower and cheddar soup (seriously run out NOW and get this) so I might even make this into a yummy
pasta sauce
over zucchini noodles or even drizzle it
over a baked potato!

pasta, or loosened further with water to be used as a salad dressing.

over pasta with a salad, or combine those two ideas by serving it on top of spaghetti squash or

Eggplant makes the perfect «noodles» in this flavorful low carb lasagna, so much so that I think I prefer this recipe to my
zucchini lasagna and maybe even

pasta lasagna (simply because I feel better after eating it!).
