My go - t recipe has been a
pesto pasta salad with
zucchini in it.
So instead of
pasta, make «zoodles» out of
zucchini and serve with tomato sauce or
pesto (and drop in a few mixed veggies for still more servings!)
Arrange the
pasta on four plates, add roasted cauliflower,
zucchini slices, lettuce, tomatoes and a few dollops
pesto on top.
That's what this simple
pesto pasta (along with
zucchini salad!)
My favorite, and fastest, go - to meal is to cook whole wheat
pasta and eat it with fried
zucchini,
pesto (bought fresh at the market), fresh parmesan, and toasted pine nuts.
