Grilled zucchini pieces are great in this salad and I've added a diced red pepper but mostly because I like the added color.
Top zucchini pieces with oil, chopped garlic, salt and pepper then bake for roughly 10 - 15 minutes or until cooked through.
Bake on middle rack in oven about 6 minutes, then gently
turn zucchini pieces over using a spatula and cook another 6 minutes or until zucchini is fork tender and lightly browned.
Grill
the zucchini pieces until they are cooked and have grill marks on both sides.
My grandma always used bowtie noodles, so
zucchini pieces are about the same size and have a similar tender chewiness, so you really won't miss the noodles at all anyway.
Preheat grill to high heat, then lay
the zucchini pieces on the grill.
Cut the zucchini in half lengthwise then with a small spoon or melon baller (I used my tablespoon measuring spoon), hollow out
the zucchini pieces but leave 1/4 ″ rim.
