Well, these cucumber and avocado nori
rolls from Chocolate and
Zucchini have been a life saviour, along with a few - balanced stacks of salmon salad on cucumber
slices.
Grill the
zucchini strips (do not burn), on every strip of
zucchini place one
slice of Prosciutto, and some grated cheese,
roll and secure with a toothpick.
Alternatively, you can simply combine the beans,
zucchini, all of the marinade, herbs, salt and pepper in a dish or bowl, and toss to coat thoroughly, skipping the
rolling of the
slices (that step is just for looks).
Place a teaspoonful of filling at the wider end of each
zucchini slice and
roll up the
slice.
Scoop a generous portion of the enchilada filling along the
zucchini slices (as pictured above) then gently
roll up the
zucchini over the filling to create each enchilada.
While these choices are obviously better than artificially flavored popcorn or trans - fat laden crackers, sometimes I feel that if these convenient «healthy» options didn't exists, more people would be forced to
slice up a banana or whip up some
zucchini bread when snack time
rolled around.

Take thinly
sliced zucchini and top with pesto, turkey and veggies, then

Just buy thin
slices of the best cured salmon you can get, lay them down, add some cream cheese mixed with grated
zucchini, some seasoning and
roll it up.
