Marathoner's Zucchini Ribbon Lasagna (Just 2 Sisters)-- This healthy recipe for picky eaters uses
zucchini strips in place of some of the noodles to create a fresh and filling lasagna recipe.
Swap wheat pasta for zucchini pasta — use a spiralizer (or slice thin
zucchini strips with a knife) and top with your favourite pasta sauce.
Last step — assemble the rolls by spreading the tangy goat cheese onto the
grilled zucchini strips, top with some fresh basil and roll the zucchini around the roasted potatoes.
Fresh mint and lemon zest highlight the delicate flavors of peas, green beans, and
zucchini strips in this veggie - laden dish.
Place
a zucchini strip on a cutting board and spread with goat cheese.
Spread a teaspoon or two of the filling mixture onto
a zucchini strip.
Grill
the zucchini strips (do not burn), on every strip of zucchini place one slice of Prosciutto, and some grated cheese, roll and secure with a toothpick.
In a Dutch oven cook linguine according to package directions, adding
the zucchini strips for the last 2 minutes of cooking.
Heat a bit of olive oil in a large pan and grill

I just bought a mandoline so it should make quick work of
the zucchini strips.
