I decided to use the stuffing portion of this recipe to
make blintzes for our hanukkah dinner coming up next week.
To serve, heat a little more butter in the skillet and place the formed
blintzes in the skillet.
I
love blintzes because they straddle that line between savory and sweet.
No matter the name — these tastes like
blintz pancakes to me and what could be better?
Or, you could serve these
baby blintzes hot, just with a dab of my «figgy butter.»
You can serve these scallop basil
blintzes at room temperature for guests.
I don't recommend that you serve these
scallop blintzes outside on the patio in hot humid weather.
